Peanut Butter Cookies.
How to make them.
You will need the following:
120g Spelt flour (or all purpose)
150g Cane sugar (or sugar of choice)
250g Peanut butter
20-40ml Plant Milk
2tsp Vanilla
1tsp Bicarbonate of soda
(optional) Pinch of salt if using usalted peanut butter
The Method.
Line a baking tray with greaseproof paper and preheat the oven to 180c
Add the sugar and peanut butter to a bowl and mix together, first using a fork and then your hands until mixture comes together. The consistency should be that of a sticky dough
Next add the milk and mix with a spoon until smooth and creamy
Add the flour, bicarb, salt and vanilla then combine all the ingredients using your hands, until you get a mouldable cookie dough
Roll into 40g balls and place on the lined baking tray
Flatten out the cookies using your hand and then use the back of a fork to press into to the top of the cookies, first vertically and then horizontally to create a criss-cross pattern
Bake the cookies at 180c for 10 to 12 minutes. Allow cookies to fully cool before eating
