Banana cake

How to make them. 

You will need the following:

  • Wholemeal Flour (or flour of choice) 200g

  • 75g Coconut Sugar (or sugar of choice)

  • Baking Powder 2 tsp

  • Bicarb/Baking Soda 1/2 tsp

  • Pinch of Salt

  • Melted Coconut Oil (oil of choice) 75ml

  • Vanilla Extract 2 tsp

  • 3 large bananas (or 4 small)

    *OPTIONAL* 

    Plant Milk of choice can be added to loosen

     mixture if the batter is a little thick. 20 - 50ml

    For The Chocolate Frosting:

  • 450g Icing Sugar

  • 60g Cocoa Powder

  • 45g Vegan Butter 

  • 60 - 80 ml Plant Milk

  • 1 tsp Vanilla extract

Vegan banana cake

The Method.

  1. Set the oven to 180C and line baking tin (I used an 8inch by 8inch square cake tin).

  2. Add the flour, sugar, baking powder, bicarb and salt to a large bowl and mix well. 

  3. In a separate bowl mash the bananas with a fork and then add the melted coconut oil and vanilla extract and beat with a whisk or a fork until smooth.

  4. Add the wet ingredients to the dry and mix well. The mixture should be thick but runny. Add the plant milk if you need to loosen the mixture (Adding milk if you want your bake to be more of a banana cake than a banana bread).

  5. Bake your cake for 45-60 minutes, checking every 5 minutes after 45 minutes of cooking. 

  6. When your cake is baked remove from the oven and let cool before icing.

    For the Frosting:

    1. Add Icing Sugar and cocoa powder to a bowl and mix well.

    2. Next add in the butter and either mix with an electric whisk or beat with a wooden spoon until thick and creamy.

    3. Add in the vanilla extract and plant milk and mix until fully combined.

    4. Spread generously on the cooled cake and enjoy!
